Days 6, 7 & 8 at the Campbell's

Sorry for the delay. This past weekend was a complete whirlwind of activity. We were invited out on Friday night to go for coffee with Ian's parents and sister at their favourite diner. We were good boys and girls and only had coffee, iced tea and Mac had a coke.

Saturday was our day to spend at the Western Fair. We started the day with homemade "egg mcmuffins" which is a homemade breakfast favourite for me. I love it when a balanced meal is also portable! The Eat @ Home challenge had to be put on hold for the rest of the day on Saturday though. You can't go to the fair and not eat fair food. I'll spare you pictures of the gluttony!

Sunday was a beef stir fry and we tried the garlic, ginger, hoisin sauce combination that Jenn recommended. I'm not sure if it was than we made it with beef instead of chicken or didn't have enough sauce but it wasn't a crowd favourite...however, everyone cleaned their plates so it obviously wasn't too bad! Mackenzie also made a Virgin Singapore Sling which was SOOO yummy! (Fill a large glass 1/2 full of Sprite, fill the next 1/3 with Five Alive Citrus juice, add grenadine syrup to taste and a squeeze of fresh lime).


Today, we emptied out the fridge by eating all of the leftovers so we're ready to start fresh tomorrow. Luckily, my Kraft "What's Cooking" magazine for Fall just came in the mail so I'll have lots of inspiration for the coming week! I'll keep you posted!

I really like the What's Cooking magazine too. I usually try 3 or 4 things out of each issue and most times they're a hit.
