Day 9 at the Parks: Stomput

One of the long standing meals at my household is from my Oma and Opa, Stomput Spinazzi. If you are dutch you may know this dinner. It will sound odd when I describe it, but I have served it to alot of people and only had one or two people who didn't like it.

Basically it's mashed potatoes with cooked spinach mixed in. Not too much extra (although I have had it with cheese on top and that is excellent as well. If you make it use the chopped spinach, not whole ones. I usually use frozen spinach but fresh cooked spinach will work as well.

One the side is egg salad. Again pretty basic, eggs, Miracle Whip, salt and pepper, some mustard powder and paprika.

The thing that really makes it is the sweet pickle juice you put on it. Not too much but approximatly 2 tablespoons on a plate full.

Cheap and delicious

ooooh stamppot...Yes I know that. The word in Dutch is Stamppot (as here http://en.wikipedia.org/wiki/Stamppot) . In Flemish we'd say Hutsepot or Stoemp. It all basically says that you mash the potatoes and vegetables all together.

I do have to add a sausage or a thick slice of bacon to the dish though and then you have the perfect winter dish. But meat would be essential to me.

We make "Greater Potatoes" which is mashed potatoes with steamed chopped up broccoli and lots of cheese and a bit of sour cream. It is a little piece of heaven :o)

I think I'll give it a try with spinach, the boys seem to really like spinach and it'll be green like the Hulk so how can it go wrong?
