Day 3 at Chateau Beck


Tonight I made eggplant for dinner. Kind of like Eggplant Parmigan but without the breadcrumbs stuck to the egg coating and with havarti cheese. So really it's just eggplant, havarti and store bought spaghetti sauce with italian spice sprinkled over. It is tasty, quick and relatively cheap.

The grownups like it -the boys have 3 bites than fill up on veggies.
